What to do with the Leftovers?

Happy Monday!

If you haven't heard about "freezer cooking," then I suggest you visit this website to read some Frequently Asked Questions on it. Essentially, you take one day a month (or every few weeks) to cook a bunch of meals that will be stored in the freezer until their designated day. I find it a little intimidating, so I stick with my own little process of freezing and reusing leftovers. One day I might try it.

This past week I attempted the Phils BBQ Broham by cooking a pork shoulder in the Crock pot. I had a few servings of pork and a LOT of "juices" leftover. I hate to waste anything, so here is a list of all the things I got out of the leftovers:

  • another pulled pork sandwich (lunch for JM)
  • juice to cook and flavor 2 lbs of dried black beans (much cheaper than the canned counterpart) to be used for black bean burritos and vegetarian chili
  • a topping for a last minute Friday night pizza (homemade dough from this recipe)
So, although I don't follow the strict protocols of the freezer cooking days, I do try to plan out the meals for the week. The chili is cooking tonight, so we will see how it turns out!





















































I found a few encouraging blogs posts from the Weekly Links on Beacon blog on Social Media and Multi-tasking. I was really convicted especially after starting to read the multi-tasking article as I was doing half of the things he lists in the article.
